Do you miss creamy dressings on your salad?
I do! So many of them are made with milk, egg, or soy that I can't tell you the last time I even bothered looking for a safe bottled dressing. Luckily, it's super easy to make at home. If you never have, I strongly encourage you to try. Salad dressings don't need to be fussy or complicated to be good and they can easily outshine that stuff that comes in a bottle.
This Lemon Yogurt Dressing falls a little toward the sweet side, so I drizzled it over mache rosettes, diced yellow cucumber and some leftover chicken breast (and yes, it tasted as good as it looks in the picture!). But then, after I'd finished taking all the photos for this post and eaten half the salad, I spied the cherry tomatoes over on the counter. I decided to add a handful of those too and oh man, the acidity from the tomatoes was the perfect compliment to the dressing. Holy moly. I will now (and forever!) add tomato to whatever salad I may drizzle this dressing. Just sayin.
I like to use fresh herbs whenever I can in salad dressings, so in this one I used lemon thyme. But if you don't have lemon thyme growing in your garden like I do, experiment and substitute with another fresh herb that you like. Regular thyme, lemon balm, mint, dill — whatever's available. (But maybe keep in mind that lemon thyme is such a wonderful little herb that you may want to consider growing yourself!) Lemon Yogurt Dressing
The 8SAFE coconut yogurt that I used for this recipe was SO DELISCIOUS Dairy Free Cultured Coconut Milk, plain. Please be mindful to always read your labels and keep yourself safe.
- 3 Tbsp plain coconut yogurt
- 1 Tbsp pure olive oil
- juice from 1/2 large lemon (about 2 Tbsp)
- 1/2 tsp honey (or 1/4 tsp agave)
- 1/4 tsp fine sea salt
- 1/8-1/4 tsp fresh lemon thyme leaves
Whisk all the ingredients together in a bowl or use a covered jar and shake to mix ingredients thoroughly. Drizzle over salad or as a dip for fresh veggies. Enjoy!
